WThis is a home-style version of a cocktail from a new drinks list. It's a batch pre-mixed that's loaded with the essence of a Christmas time, which makes it ideal for a holiday party. Save the extra syrup for morning drinks, puddings, or to mix additional servings of the drink.
Bikini Recipe
Serves 10 people
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Syrup: Put all the components into a saucepan, bring to a simmer, agitating until the sugar dissolves. Then, remove from the stove allowing it to cool completely. Transfer to a sealable bottle, close it and refrigerate it chilled, where it will keep for about one month.
Preparing the Batch Mix: Mix every liquids in a big jug, let it rest for 60 minutes, then strain best through muslin, making it fully clarified.
For serving: Add 85ml from the premix to a mixing glass filled with ice, and stir carefully for a minute to cool it down. Pour into an cold coupe glass or equivalent, decorate with some cranberries and complete it using a light spray of mandarin oil above the glass.
